Ingredients
  

  • 2 cups cooked chicken, shredded
  • 4 large eggs beaten
  • 1 cup cheddar cheese, shredded
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup onion, diced
  • ½ cup bell peppers, diced
  • 1 tablespoon olive oil
  • 4 whole wheat tortillas for breakfast burritos (optional)

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Sauté diced onions and bell peppers until soft, about 3-4 minutes.
  • Add the shredded chicken and cook for another 2 minutes until heated through.
  • In a bowl, whisk together eggs, milk, salt, and black pepper.
  • Pour the egg mixture into the skillet with the chicken and vegetables. Stir continuously until eggs are cooked and scrambled.
  • Sprinkle cheddar cheese over the mixture and let it melt for 1 minute.
  • Serve as is or scoop into whole wheat tortillas for breakfast burritos.
